About: This is a rare single origin, single producer coffee from Mate Mateyos, 2nd place winner of the Cup of Excellence in 2024, operating out of a washing station in Keramo. We're thankful to offer this after working with Emily at Swift, who works with Mate and his cohort to host conferences and training training as well as provide resources to the community.
After harvest, the coffee cherries are carefully hand-sorted to ensure even ripeness, then placed in small flotation tanks where lighter fruit is removed. They are sorted by hand once more before pulping, which is done slowly and gently using a manually calibrated disc pulper that preserves as much of the mucilage as possible. At Mate’s farm, this entire process is done by hand, making it deeply labor intensive. The mucilage-rich parchment then goes through a short fermentation before being spread on shaded drying beds with strong airflow. Drying under a canopy takes four to five days longer than sun drying, but it allows for better moisture control and more consistent results. Frequent turning and careful covering help ensure even drying.
This coffee is coming out light and bright, with really lovely florals and red fruit, namely hibiscus and watermelon. The acidity gives an impression of juicy ripe watermelon. There's also a small hint of a bright spice note, similar to pink peppercorn. A very balanced coffee that we're loving as pour over and iced coffee!
Rest and house recipe: We're resting this for 14 days before brewing.
V60 - 202° water, 32g:500mL (1:15.6)
1:00 bloom with 80 mL followed by one slow pour to final volume, brewing in 3:30-4:00.
