About: Produced by Edwin Noreña at Finca Campo Hermoso, this coffee showcases his expertise in experimental processing. Known as “El Alquimista” (The Alchemist), Edwin applies his background in agroindustrial engineering to push the boundaries of fermentation.
This lot undergoes a multi-stage fermentation process. After selective harvesting, the coffee cherries soak in water for one hour before beginning primary fermentation which consists of 72 hours of sealed carbonic maceration in whole cherry form. The cherries are then pulped and enter a secondary 96-hour fermentation with mossto (pressed coffee cherry juice), Galaxy Hops are added to the tank, and the batch is recirculated every 24 hours for four days. This heavily fermented coffee is then dried on raised beds for 22 days before humidity stabilization in a warehouse for an additional 8 days.
The result is an explosive cup with intense floral aromatics, dark fruit complexity, citrus zest, and a tropical hoppy finish. Edwin’s approach uses fermentation techniques from the beer and wine industry which is clearly showcased here with his selection of hops.
