About:
Diego Bermudez is a master of the craft, and this coffee is really magical. This remarkable coffee is produced at Finca El Paraíso in Piendamó, Cauca. Diego uses an innovative thermal shock process, where the coffee is cleaned with ozone, pulped, and the biomass is fermented with specific yeast to enhance tropical fruit aromatics. The fermented biomass is then combined with the coffee seeds in a pressurized tank, where the temperature is gradually increased and then abruptly decreased, allowing the beans to absorb the complex flavors. The result is a vibrant cup with prominent notes of lychee and mandarin, complemented by hints of pineapple, peach, tart cherry, and kiwi. This is truly a special coffee that we're honored to have again!
