About: This coffee comes to us through Unblended, a company dedicated to supporting young producers in Colombia by providing education, mentorship, resources, and infrastructure. Andres Cardona is one of the mentors in their program. Andres runs his family farm, La Ilusión, that has been in his family for decades. Andres is a master of fermentation, and opens his processing facility to other local producers to utilize. Perhaps it's the power of suggestion, but we're getting some lovely English Porter vibes from this; chocolate malt and cherry upfront with supporting fruit notes like tangerine and raspberry. This has been a great immersion brew (Aeropress, drip, etc.) for bringing out the beeriest characteristics, but our pour overs bring out more of the fruit notes. Espresso is bringing out the best of both. This coffee is fun to play with as you can get a lot out of it depending on how you brew it.
From Unblended: The Beer is named in honor of Doug from Burial Beer. This process was suggested by him during his visit alongside Methodical Coffee. Doug aimed for a more controlled fermentation, so he recommended fermenting indoors in the drying beds, where the temperature is more stable, and adding the coffee pulp after it has been
pulped. This approach would achieve a flavor profile with red fruit notes while maintaining the smoothness and body of a washed coffee. The result is a coffee that ferments for 4 days with both the coffee pulp and natural leachate, producing an exceptionally sweet cup with prominent caramel and red fruit notes.
Rest and house recipe: We're resting this for about 10-14 days.
V60 - 202° water, 32g:500mL (1:15.6)
0:45 bloom with 60mL followed by 4 equal pours to final volume.
Aeropress - 202° water, 12g:200mL, 3:30 brew time
1:15.6 is our preferred ratio, bringing out a fuller body.
