About: This coffee comes to us through Unblended, a company dedicated to supporting young producers in Colombia by providing education, mentorship, resources, and infrastructure. Andres Cardona is one of the mentors in their program. Andres runs his family farm, La Ilusión, that has been in his family for decades. Andres is a master of fermentation, and opens his processing facility to other local producers to utilize. This coffee reminds us of dessert; chocolate covered dried blueberries with a creamy mouthfeel similar to cheesecake. It's been a favorite of ours on all brew methods.
From Unblended: Luna Azul, meaning “blue moon”, is named for its strong flavor of blueberries and dark chocolate. “It will take you to the moon,” he says proudly. After one week of fermentation in cherry in open tanks, it is depulped without water to keep the mucilage (the sticky part of the cherry together with the bean) this allows Andres to get a sweeter cup. The beans are then spread onto raised drying beds for 1 to 3 weeks, depending on the weather at the farm, until it reaches 11% moisture.
Rest and house recipe: We're resting this for about 10-14 days.
V60 - 202° water, 30g:500mL (1:16.6)
0:45 bloom with 60mL followed by 4 equal pours to final volume.
1:16 has been our sweet spot. 1:15 is also a great cup if you want a bit more of a jammy cup.
