About: This sidra bourbon (Spanish for cider) was sourced directly from Alejandro, who sent us a text to let us know he had some special coffee for us. We’ve been building our relationship with Alejandro over the past year and have tried some stellar coffees from him. Below is all about this coffee, direct from Alejandro:

“Bourbon cider, an outsider to its general Bourbon genetics, as this variety doesn't exhibit the characteristic sweetness of its Bourbon family. Instead, it highlights a blend of silkiness and medium acidity. This crop has taught us that resilience is important and that the combination of fighting deforestation, protecting ancient trees, and preserving bird habitats can negatively impact production, but for us, it's fundamental to care for and preserve spaces that have been home to the voiceless. Birds whose songs move me and motivate me to keep harvesting. Bamboo groves that, when the sun rises, reflect the peace and tranquility that only the countryside can provide. It's a coffee that, thanks to its washed processing, you can surely enjoy in the mornings; sip after sip, you'll be transported to our bamboo groves.

The planting height of bourbon cider is 1640.

The processing of Cider bourbon involves washing, anaerobic fermentation for 45 hours, followed by three more washes after pulping. The difference between batches lies in the harvest time; each was harvested on a different day.”

House recipe: Origami/V60 - 18g:300 mL (1:16.7). 1:00 bloom with ~50 mL. Slow pour to ~170 mL. Once the water level is at the top of the grounds, one more slow pour to 300 mL. Total brew time ~3:00-3:30. Medium-coarse grind size (90 clicks on K7).
