About: This coffee was sourced directly from Alejandro, who sent us a text to let us know he had some special coffees for us. Below is the description of this Chiroso directly from him:

“Bourbon Chiroso: Without a doubt, one of the best coffees we've processed this year. It's a coffee that reminds me of the knights of the night we've planted along the edges of our fields. Its delicious aroma and fragrance evoke a hint of jasmine with every sip. Its bright acidity reminds me of every drop of effort poured into this coffee.

Its characteristic sweetness of bourbon also reminds me of my beautiful town of Inzá, its volcanoes, the natural beauty of the entire Andean mountain range, and the voice of my grandfather at the end, telling me not to stop, to keep going for my dreams. My greatest mission is for consumers to see our farm, "La Argelia," and Inzá, Cauca, as a unique origin, to highlight our stories and transport them to our crops. I want us to be a versatile product for all their preparation methods, and for everyone in this great chain to win and be recognized for their work.

The processing of Chiroso bourbon involves washing, anaerobic fermentation for 60 hours, followed by three washes after pulping.”

House recipe: Origami/V60 - 18g:300 mL (1:16.7). 1:00 bloom with ~50 mL. Slow pour to ~170 mL. Once the water level is at the top of the grounds, one more slow pour to 300 mL. Total brew time ~3:00-3:30. Medium-coarse grind size (90 clicks on K7).
