Tasting Notes: Mexican chocolate, caramel, fresh herbs, cinnamon bark
Origin: Cipelah, West Java, Indonesia
Varietal: Modern Hybrids (Ateng, Djember, Jember, Typica)
Process: Wet-Hulled (Giling Basah)
About: This exceptional coffee is sourced from smallholder farmers near Mount Tilu in West Java's Cipelah village. The beans undergo traditional wet-hulled processing, a method that imparts a distinctive earthy profile that you'd expect from Sumatran coffee. The cup reveals flavors of Mexican chocolate and caramel, complemented by fresh herbal notes and woody cinnamon bark. As it cools, subtle hints of sage, oregano, and a peppery nuance emerge. With a syrupy body and robust bittersweetness, this coffee is particularly well-suited for espresso drinks, but we've enjoyed this in all preparations.
Suggested Brew Method: Espresso, filter, french press
