This micro-lot is cultivated by producer Hildaly Leiva at San Vicente Farm in Honduras. The Parainema varietal, a hybrid developed through the Central American Coffee Research Program (PROMECAFE), was specifically bred for its resistance to coffee leaf rust and adaptability to high-altitude climates. Additionally, a lot of this varietal was the Cup of Excellence winner in 2017. This unique varietal is prized for its large, elongated beans and its ability to produce complex and delicate flavor profiles.
After harvesting, the beans undergo a meticulous honey process, retaining much of their natural mucilage during drying. This enhances their inherent sweetness and mellows acidity, resulting in a cup with pronounced floral notes, a creamy mouthfeel, and a smooth, mellow character.
