About: This coffee is sourced from the Gigesa Washing Station in the Guji Zone of Ethiopia, where over 500 smallholder farmers, each with 2-5 hectares of land at elevations of 1850-2100 meters, contribute their cherries. The natural process involves meticulous attention to detail, with cherries floated to remove lower-quality beans, then shade-dried before being spread on raised beds for 15 to 18 days.
The result is a clean, vibrant cup with layered flavors of blueberry, cherry, and cocoa powder, complemented by floral rose notes and a finish of lime and orange. Its medium body, silky mouthfeel, and balanced acidity result in a beautiful and delicate cup of coffee. The dedication of the Yonis family, who operate the washing station, ensures consistent quality that celebrates the unique terroir of the region.
