About: This coffee comes to us through Unblended, a company dedicated to supporting young producers in Colombia by providing education, mentorship, resources, and infrastructure. Sebastian Ramirez is one of the mentors in their program. This washed Pink Bourbon is one of the cleanest yet most expressive coffees we've had in a long time, and is a favorite for us. We're getting huge notes of berries and florals, a cotton candy-like sweetness along with some caramel to round out the flavor.

From Unblended: "Sebastian is a big fan of Pink Bourbon. The washed process is one of the cleanest and most balanced in his portfolio. This coffee undergoes no cherry fermentation; the cherries are depulped immediately after harvesting and fermented for 24 to 36 hours before being washed and dried.

This is where it all begins, with floral and sweet notes sparking his imagination to determine which instruments from his farm can bring out its best potential for the other processes."
